Retail and Cottage Food Program
The primary goal of the food safety program is to ensure that food is safe to eat and that consumers can feel confident when they eat food from facilities in Tuolumne County.

The California Retail Food Code (CalCode) provides the regulatory framework for the program, and environmental health specialists:
  • Conduct plan reviews for new and remodeled facilities
  • Educate operators in food safety
  • Conduct inspections
  • Investigate complaints and suspected food borne illnesses
  • Issue permits

New Food Facilities  -

Constructing a new retail food facility, remodeling or purchasing new equipment, or purchasing an existing food business, requires an inspection or submittal of plans along with a Consumer Protection Service Request form.

Cottage Foods -
California AB 1616, which became effective on January 1, 2013, allows for specific foods to be made in a private home.

Temporary Events -
Food booths at events such as fairs, farmers’ markets, chili cook-offs need to obtain a permit.

Training & Education -
Food Safety Manager Certificate and Food Handler Cards are required for certain food operations.

Food Safety Information -
Temperature logs, maintaining a preparation refrigerator, safe food handling, etc.
